Scallop bisque
Ingredients/Components
- milk - 2 c
- salt - 1/4 tsp
- flour - 2 Tbsp
- butter or oleo - 3 Tbsp
- pepper - 1/8 tsp
- Worcestershire sauce - 1/2 tsp
- finely chopped onion - 1 Tbsp
- calico scallops - 1 lb
- spice bag with 6 peppercorns, 1 whole garlic clove and 1 bay leaf
How to make scallop bisque:
Rinse scallops to remove any grit and if large, cut into 1/2-inch pieces. Cook onion in butter until tender. Blend in flour and gradually add milk. Cook and stir over low heat until slightly thickened. Add salt, pepper, spice bag, scallops and Worcestershire sauce. Cook gently for 10 minutes. Remove spice bag and serve.
