Ingredients/Components

  • water - 1/2 c
  • lemon juice - 3 Tbsp
  • leaf lettuce - 1 item
  • chopped green onions - 1/4 c
  • diced celery - 1/3 c
  • white pepper - 1/8 tsp
  • bay scallops - 1 lb
  • Chablis or other dry white wine - 3/4 c
  • red pepper strips - 1/2 c

How to make scallop appetizer:

Combine wine and water in a medium saucepan; bring to a boil. Add scallops and cook 3 to 5 minutes. Drain and let cool. Combine scallops and next 5 ingredients in a shallow dish. Cover and chill 3 to 4 hours, stirring occasionally. To serve, line individual scallop shells with leaf lettuce; top with scallop mixture.
