  • salt - 1 tsp
  • flour - 2 Tbsp
  • pepper - 1/8 tsp
  • chopped onion - 1 c
  • chili powder - 1 tsp
  • tomato paste - 1 (6
  • bell pepper, chopped - 1/3 c
  • pork sausage - 1 lb
  • cheese, cut in 1/2-inch cubes - 4 oz

How to make sausage upside-down cornbread:

Preheat oven to 400°. Cook sausage, onion and bell pepper until brown and crumbly. Stir in flour. Mix in tomato paste, salt, chili powder and black pepper. Remove from heat. Stir in cheese and spread evenly in 9-inch baking pan.

Prepare muffin mix according to package. Spread over sausage mixture and bake 30 to 35 minutes. Let stand 5 minutes, loosen and invert on plate. Serve immediately.
