Ingredients/Components

  • chopped tomato - 1/2 c
  • egg, lightly beaten - 1 item
  • chopped scallions - 1/3 c
  • Italian sausage - 1/2 lb
  • dry bread crumbs - 1/3 c
  • chopped green peppers - 1/4 c
  • mushrooms about 20 - 1 lb

How to make sausage stuffed mushrooms:

Preheat oven to 375°. Wipe mushrooms with damp paper towels. Remove stems; set caps aside.

Remove sausage meat from casings and cook in skillet. Remove cooked meat, saving drippings. To drippings, add tomato, scallions and green peppers. Saut?© 3 to 5 minutes or until tender but not browned. Add sausage and mix well. Add egg and bread crumbs; stir until blended.

Stuff mushrooms with sausage mixture, mounding the tops. Place on greased baking sheet and bake 20 minutes or until filling is hot and mushrooms are cooked through.
