Ingredients/Components

  • flour - 3 Tbsp
  • butter - 8 Tbsp
  • melted butter - 3/4 c
  • hard-boiled eggs, chopped - 2 item
  • salt to taste - 1 item
  • chopped parsley - 3 Tbsp
  • sherry - 1 Tbsp
  • crab meat - 2 lb
  • breadcrumbs - 3/4 c
  • chopped mushrooms - 1 c
  • chopped stuffed olives - 2 Tbsp
  • lukewarm milk - 3 c
  • scallions, chopped - 5 item
  • filo - 1/2 lb
  • Pepperidge Farm Puff Pastry Sheets pkg - 1 pkg
  • your favorite sausage meat use 1 pkg - 2 pkg
  • egg and a little milk, beaten together - 1 item
  • dash each of pepper sauce, mint and basil - 1 item

How to make sausage rolls:

Preheat oven to 350°.

Saute scallions in the 8 tablespoons butter in a large skillet. Add flour and mix. Slowly add milk and stir until creamy. Remove from heat. Add remaining ingredients except filo and melted butter. Consistency may be altered by the addition of more milk or more crumbs. If necessary to prevent drying, cover filo with wax paper and a damp towel while working.

Brush one sheet of filo with melted butter; place another sheet on top and butter. Divide crab meat filling into 5 portions. Place one portion 1-inch from the bottom and sides of the longest edge and all the way across the filo.

Carefully roll as a jelly roll, folding edges as you go along. Bake until golden, about 25 minutes, on greased cookie sheet or wrap rolls in foil and freeze. They can go from freezer to oven for unexpected guest.

Slice and serve for a delicious seafood tidbit. Makes 85 to 90 pieces.
