Ingredients/Components

  • sugar
  • vinegar - 2/3 c
  • celery, chopped - 1 c
  • onion, chopped fine - 1 c
  • green pepper, chopped fine - 1 c
  • large can sauerkraut, drained - 1 item
  • jar pimento, chopped optional - 1 oz

How to make sauerkraut salad:

Combine sugar and vinegar in saucepan and bring to a full boil over medium heat until sugar is dissolved. Mix remaining ingredients in a large, glass dish. Pour vinegar mixture over sauerkraut mixture. Let stand 24 hours in refrigerator. This will keep for 3 to 4 weeks in refrigerator. Very good with pork dishes or as a relish on hot dogs or hamburgers.
