Sauerkraut



Ingredients/Components
- butter - 2 Tbsp
- boiling water - 2 c
- chopped onion - 1/2 c
- caraway seed - 1 tsp
- sauerkraut - 1 qt
- potato, pared and grated - 1 item
How to make sauerkraut:
Melt butter in a heavy saucepan. Add onion and cook until golden yellow. Stir in sauerkraut and cook for 8 minutes. Mix in potato and caraway seed. Pour in the boiling water. Cook, uncovered, over low heat 30 minutes. Cover and continue cooking 30 minutes longer. Makes 6 to 8 servings.Brown sugar or an apple may be added to give a different flavor.
