Ingredients/Components

  • sugar - 1 Tbsp
  • salt - 1 Tbsp
  • flour - 2 Tbsp
  • water
  • ground ginger - 1/2 tsp
  • red wine vinegar
  • whole black peppercorns - 6 item
  • medium onions, sliced - 2 item
  • bay leaves - 6 item
  • whole cloves - 12 item
  • lemon, sliced - 1/2 item
  • beef bottom round - 4 lb
  • gingersnap cookies, broken - 1 item

How to make sauerbraten:

You will need 1 roasting bag and freezer bag.

In large (gallon size) freezer bag, combine all ingredients except meat, cookies and flour. Mix well until sugar and salt are dissolved. Add meat. Seal. Refrigerate for at least 36 hours, turning sealed bag morning and night.

To cook: Remove meat from bag. Toss meat in roasting bag containing 2 tablespoons flour. Remove lemon slices from marinade. Add marinade to meat. Tie bag. Place in roasting pan. Pierce top of bag with knife to let moisture escape. Put in oven so bag doesn't touch oven walls. Cook at 325° for 2 hours. Remove meat from bag. Empty juices into large saucepan. Combine 3/4 cup juice, 1/4 cup water and 1/3 cup gingersnaps. Cook and stir to thicken. (Makes 1 cup gravy.) You may wish to double or triple gravy proportions. Serves 10.
