Ingredients/Components

  • beef round or rump - 3 3
  • bay leaves - 4 item
  • peppercorns - 1/2 tsp
  • whole cloves - 8 item
  • medium onions, sliced - 2 item
  • small carrot, minced - 1 item
  • stalk celery, chopped - 1 item
  • red wine vinegar
  • water
  • salt - 1 tsp
  • pepper - 1/2 tsp
  • butter - 1/4 c
  • Place in deep ovenproof dish
  • hot marinade from sauerbraten
  • gingersnap crumbs - 2/3 c
  • dairy sour cream - 1/2 c
  • salt to taste - 1 item

How to make sauerbraten:

Put salt and pepper on meat. Place in deep ovenproof dish. Add spices and vegetables. Heat vinegar and water to boiling. Pour over meat. Cool, cover and refrigerate. Let marinate 48 hours, turning meat twice a day.

When ready to cook, remove meat from marinade. Dry with paper towels. Melt butter in Dutch oven. Brown meat all over. Strain marinade and pour over meat. Cover tightly; simmer slowly 2 1/2 to 3 hours or until fork-tender. Remove to warmed platter. Slice and keep warm. Serves 6.Gingersnap Gravy:2 Tbsp. sugar1 1/2 c. hot marinade (from sauerbraten)1/2 c. water2/3 c. gingersnap crumbs1/2 c. dairy sour cream salt to taste Melt sugar in skillet, stirring until brown. Gradually stir in hot marinade and water. Add gingersnap crumbs. Cook and stir until mixture thickens. Add sour cream and salt to taste. Ladle gravy over sauerbraten! Makes 2 cups.
