Ingredients/Components

  • salt - 1/2 tsp
  • butter - 3 Tbsp
  • nutmeg - 1/4 tsp
  • heavy cream - 1 c
  • lemon juice - 1 tsp
  • pepper - 1/2 tsp
  • chopped scallions - 2 3
  • fresh mushrooms, chopped - 1/3 lb
  • grated Swiss or Gruyere cheese - 1/2 c
  • cooked salmon - 1 c
  • egg white, slightly beaten reserve yolk - 1 item
  • dill weed, minced - 1 tsp
  • eggs plus other yolk - 2 item

How to make salmon quiche:

Prepare pie shell. Pierce shell with fork on sides and bottom. Brush with slightly beaten egg white. Bake 7 minutes at 400°. Let cool. Melt butter; saute onion and mushrooms. Add salt, lemon juice and dill. Cook until heated. Combine with cream, beaten eggs, salt and pepper. Pour over salmon mixture in shell. Sprinkle with cheese over the top. Bake at 375° for 34 to 40 minutes.
