Salmon mousse
Ingredients/Components
- salt - 1/4 tsp
- gelatin - 1 pkg
- cold water - 1/4 c
- boiling water - 1/2 c
- whipping cream - 1/2 c
- lemon juice - 1 Tbsp
- grated lemon rind - 1 Tbsp
- paprika - 1/4 tsp
- pepper - 1/8 tsp
- mayonnaise - 1/2 c
- cottage cheese - 3 c
- Tabasco sauce - 1/2 tsp
- green onions - 3 Tbsp
- chopped capers - 1 Tbsp
- chopped fresh dill weed - 2 Tbsp
- canned red salmon, drained and chopped - 2 c
- Add boiling water and stir until dissolved; cool
How to make salmon mousse:
Soften gelatin in cold water. Add boiling water and stir until dissolved; cool. Add mayonnaise, lemon juice and rind, onion, Tabasco, paprika and salt. Mix well. Chill to consistency of unbeaten egg white. Add salmon and capers; beat well. Whip cream and into salmon mixture. Turn into 5 1/2 cup oiled fish mold. Add cheese and fill mold. Chill until set. Unmold on serving platter. Garnish with watercress and lemon slices.Watercress Sauce for Salmon Mousse:1 bunch watercress, chopped (1 3/4 c.)2 Tbsp. chopped fresh dill weed3 Tbsp. green onions1 Tbsp. lemon juice1 c. mayonnaise1/2 tsp. salt1/8 tsp. pepper Blend or puree until smooth.
