Ingredients/Components

  • salt - 1/4 tsp
  • gelatin - 1 pkg
  • cold water - 1/4 c
  • boiling water - 1/2 c
  • whipping cream - 1/2 c
  • lemon juice - 1 Tbsp
  • grated lemon rind - 1 Tbsp
  • paprika - 1/4 tsp
  • pepper - 1/8 tsp
  • mayonnaise - 1/2 c
  • cottage cheese - 3 c
  • Tabasco sauce - 1/2 tsp
  • green onions - 3 Tbsp
  • chopped capers - 1 Tbsp
  • chopped fresh dill weed - 2 Tbsp
  • canned red salmon, drained and chopped - 2 c
  • Add boiling water and stir until dissolved; cool

How to make salmon mousse:

Soften gelatin in cold water. Add boiling water and stir until dissolved; cool. Add mayonnaise, lemon juice and rind, onion, Tabasco, paprika and salt. Mix well. Chill to consistency of unbeaten egg white. Add salmon and capers; beat well. Whip cream and into salmon mixture. Turn into 5 1/2 cup oiled fish mold. Add cheese and fill mold. Chill until set. Unmold on serving platter. Garnish with watercress and lemon slices.Watercress Sauce for Salmon Mousse:1 bunch watercress, chopped (1 3/4 c.)2 Tbsp. chopped fresh dill weed3 Tbsp. green onions1 Tbsp. lemon juice1 c. mayonnaise1/2 tsp. salt1/8 tsp. pepper Blend or puree until smooth. Stir and chill. Serve with Salmon Mousse.
