Salmon loaf with cucumber sauce
Ingredients/Components
- milk - 2/3 c
- salt - 1/4 tsp
- butter or margarine, melted - 2 Tbsp
- lemon juice - 1 Tbsp
- egg, beaten - 1 item
- dash of pepper - 1 item
- cracker crumbs - 1 c
- finely chopped onion - 2 Tbsp
- dill weed - 1/4 tsp
- chopped cucumber - 1/2 c
- can pink salmon, drained and flaked - 1 1/2
- Cucumber Sauce - 1 item
- Combine first 7 ingredients, stir in salmon
How to make salmon loaf with cucumber sauce:
Preheat oven to 375°. Combine first 7 ingredients, stir in salmon. Shape into 7 x 3 1/2-inch loaf in greased shallow baking pan; bake 30 minutes. Let stand 5 minutes before slicing. Serve with cucumber sauce. Yields 4 servings.Cucumber Sauce:1/2 c. sour cream1/2 c. chopped cucumber1/2 tsp. lemon juice1/4 tsp. dill weed1/4 tsp. salt Combine ingredients; mix well.
