Ingredients/Components

  • onion - 1/2 c
  • butter - 1/4 c
  • can red salmon, cleaned - 1 1/2
  • can tuna - 1 1/2
  • parsley flakes - 1/4 c
  • dry mustard - 1 tsp
  • salt - 1/2 tsp
  • pepper or to taste - 1/2 tsp
  • eggs - 3 item
  • bread crumbs - 2 c
  • flour - 3 Tbsp
  • milk - 2 c
  • can peas, drained - 1 oz

How to make salmon loaf:

Cream Sauce:1/4 c. butter3 Tbsp. flour2 c. milk1 (16 oz.) can peas, drained Saute onion in butter until transparent. Add salmon, tuna, parsley flakes, mustard, salt and pepper. Remove from heat. Beat eggs and add to fish mixture. Add bread crumbs until tacky (or holds together). Spread in a 9 x 5-inch loaf pan. Bake at 350° for 50 minutes.

Cream Sauce: Melt butter. Add flour to make a paste. Slowly add milk, mixing constantly until thickened. Add peas. Spoon over salmon loaf on plate.

Note: Recipe can be doubled for larger servings.
