- garlic salt
- liquid smoke - 1 tsp
- mustard seed
- hamburg - 5 lb
- red pepper cayenne - 1/2 tsp
- Quick salt - 5 tsp
- ground peppercorns
- regular salt - 2 tsp
How to make salami:
Mix well. Knead for 10 minutes. Store in refrigerator for 24 hours. Knead 10 minutes again. Store in refrigerator for 24 hours. Shape in 5 or 6 loaves and place on broiler pan. Bake 4 hours at 150°; turn loaves over and bake 4 hours more. Will keep up to 3 to 4 weeks in refrigerator.Recipe categories: Lunch/snacks, Meat, Beef.
