  • garlic salt
  • liquid smoke - 1 tsp
  • mustard seed
  • hamburg - 5 lb
  • red pepper cayenne - 1/2 tsp
  • Quick salt - 5 tsp
  • ground peppercorns
  • regular salt - 2 tsp

How to make salami:

Mix well. Knead for 10 minutes. Store in refrigerator for 24 hours. Knead 10 minutes again. Store in refrigerator for 24 hours. Shape in 5 or 6 loaves and place on broiler pan. Bake 4 hours at 150°; turn loaves over and bake 4 hours more. Will keep up to 3 to 4 weeks in refrigerator.
