Ingredients/Components

  • water - 1 c
  • light brown sugar - 1/2 c
  • garlic powder - 1 tsp
  • lean ground beef - 2 lb
  • onion powder - 1 tsp
  • liquid smoke
  • mustard seed - 1 tsp
  • coarsely ground black pepper - 1 tsp
  • Morton Tender Quick salt * - 2 Tbsp

How to make salami:

Combine all ingredients in a large mixing bowl and mix thoroughly with your hand. Shape into 3 (10-inch) logs. Wrap in plastic wrap and refrigerator for 24 hours. This step is mandatory.

Bake on broiler pan for 1 1/2 hours at 350°. (Remove plastic wrap before baking.) Serve warm or cold with crackers.
