Russian potato salad
Ingredients/Components
- walnuts, chopped - 1/4 c
- white wine vinegar - 2 Tbsp
- salt and pepper to taste - 1 item
- olive oil - 1/4 c
- hard-cooked eggs, coarsely chopped - 2 item
- medium potatoes, cooked, peeled and diced - 4 item
- pitted black olives, sliced - 1/3 c
- green onions including tops, finely chopped - 2 item
- large beet, cooked, peeled and diced - 1 item
- diced cucumber or diced dill pickle - 1/2 c
- sour cream light or sour half and half - 1/2 c
How to make russian potato salad:
Combine first 7 ingredients. Sprinkle with oil, vinegar, salt and pepper; toss gently but thoroughly. Add sour cream and toss again. Adjust seasoning if necessary. Cover and chill. Serves 4 to 6.
