Ingredients/Components
- sugar
- cinnamon - 1/2 tsp
- salt - 2 tsp
- ginger - 1/2 tsp
- margarine - 1/2 c
- orange juice
- chopped onion - 1 item
- grated orange rind - 2 tsp
- Accent - 2 tsp
- English walnuts - 1 c
- whole cranberries - 3 item
- fryer chickens or 8 breast halves - 2 item
How to make ruby chicken:
Sprinkle chicken with Accent and salt. Brown in margarine in skillet (large). Add onion, spices, orange juice and rind. Cover and simmer 20 minutes. Add walnuts and cranberries. Sprinkle sugar on top. (Be careful not to burn). Stir occasionally as it simmers, uncovered, 10 minutes. Serve with rice.Recipe categories: Chicken, Main dish, Poultry.
