Ingredients/Components

  • salt - 1 tsp
  • water - 1 Tbsp
  • stick butter - 1 item
  • egg, beaten - 1 item
  • pepper - 1/4 tsp
  • grated Cheddar cheese - 1/2 lb
  • medium onion, chopped - 1 item
  • slices bread, crumbled - 3 item
  • fresh sole or orange roughy - 2 lb

How to make rolled fillet of sole:

Sprinkle fish with salt and pepper. Sprinkle cheese and onion on each fillet. Roll, jelly roll style; secure with a toothpick. Dip each roll in egg and water wash. Coat with bread crumbs. Place in a well buttered glass dish (11 x 7-inch). Pour melted butter over top; bake at 400° for 25 to 30 minutes.
