Ingredients/Components
- sugar - 1 c
- cream cheese
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1/4 c
- chopped nuts - 3/4 c
- flour - 1 c
- baking powder - 1 tsp
- chocolate chips - 1 c
- egg - 1 item
- margarine, softened - 1/4 c
- powdered sugar - 3 c
- margarine - 1/2 c
- mini marshmallows
- 1 sq - 1 oz
How to make rocky road fudge bars:
Filling:6 oz. cream cheese1/4 c. margarine, softened1/2 c. sugar2 Tbsp. flour1/2 tsp. vanilla1 egg1/4 c. chopped nuts1 c. chocolate chips Frosting:2 c. mini marshmallows1/4 c. margarine1/4 c. milk1 oz. (1 sq.) unsweetened chocolate3 c. powdered sugar1 tsp. vanilla Heat oven to 350°. Grease and flour a 13 x 9-inch pan. In a large saucepan over low heat, melt 1/2 cup margarine and 1 oz. chocolate, stirring constantly until well blended. Add the flour and remaining base ingredients. Mix well and spread in prepared pan.In a small bowl, combine all filling ingredients except nuts and chocolate chips. Beat 1 minute at medium speed until smooth and fluffy. Spread over chocolate mixture. Sprinkle with nuts and chocolate chips. Bake at 350° for 25 to 35 minutes or until toothpick inserted in center comes out clean. Immediately sprinkle marshmallows over top and return to oven for 2 minutes.
For Frosting: In a large saucepan over low heat, combine the margarine, milk, chocolate and 2 ounces cream cheese. Stir until well blended. Remove from heat. Stir in powdered sugar and vanilla until smooth. Immediately pour over marshmallows and lightly swirl. Refrigerate until firm.
