Ingredients/Components
- sugar - 1 c
- cream cheese
- eggs - 2 item
- vanilla - 1 tsp
- pkg - 6 oz
- milk - 1/4 c
- chopped nuts - 3/4 c
- flour - 1 c
- butter - 1/2 c
- baking powder - 1 tsp
- egg - 1 item
- powdered sugar, sifted - 3 c
- Grease and flour a 9 x 13-inch pan
- cream cheese reserve 2 oz
- 1 sq - 1 oz
How to make rocky road fudge bars:
Filling:8 oz. cream cheese (reserve 2 oz. for frosting)1/4 c. butter1/2 c. sugar2 Tbsp. flour1/2 tsp. vanilla1 egg1/4 c. chopped nuts6 oz. pkg. (1 c.) semi-sweet chocolate chips Heat oven to 350°. Grease and flour a 9 x 13-inch pan. In a large saucepan, over low heat, melt 1/2 cup butter and 1 ounce unsweetened chocolate, stirring constantly, until smooth. Lightly spoon flour into measuring cup; level off. Add 1 cup flour and remaining base ingredients; mix well. Spread into prepared pan.In a small bowl, combine all filling ingredients, except 1/4 cup nuts and chocolate chips. Beat for 1 minute at medium speed until smooth and fluffy; stir in nuts. Spread over chocolate mixture; sprinkle evenly with chocolate chips. Bake at 350° for 25 to 35 minutes or until toothpick inserted in center comes out clean.Frosting:2 c. miniature marshmallows1/4 c. butter1/4 c. milk1 oz. (1 sq.) unsweetened chocolate reserved 2 oz. cream cheese3 c. powdered sugar, sifted1 tsp. vanilla Immediately sprinkle marshmallows over top. Return to oven and bake an additional 2 minutes. In a large saucepan, over low heat, combine butter, milk, unsweetened chocolate and reserved cream cheese; stir until well blended. Remove from heat; stir in powdered sugar and vanilla until smooth. Immediately pour frosting over marshmallows and lightly swirl with knife to marble. Refrigerate until firm; cut into bars.
