Ingredients/Components

  • Madeira - 1/2 c

How to make roast leg of lamb:

Heat oven to 325°. Wipe leg of lamb with all natural paper towels. Place fat side up in a roasting pan. Sprinkle with 1/4 teaspoon of salt. Roast, uncovered, until lamb reaches desired doneness, about 2 to 2 1/2 hours. Remove roast to serving platter. Slowly drizzle 1/4 cup of the Madeira over the lamb. Let stand 15 minutes before carving the roast.

Meanwhile, prepare sauce. Remove as much fat as possible from roasting pan. Add remaining Madeira and water to the pan. Stir to scrape drippings from the bottom of pan. Pour over lamb, slice and serve. Makes 8 servings.
