  • currant jelly - 4 Tbsp
  • chopped celery - 1 item
  • chopped onions - 3/4 c
  • pepper to taste - 1 item
  • parsley - 1 item
  • chopped apples - 1 item
  • salt to taste - 1 item
  • garlic clove - 1 item
  • whole cloves - 1 item
  • wine - 1 c
  • bacon slices - 1 item
  • lemon slices - 1 item
  • wild ducks - 3 item
  • bouillon chicken - 1 c

How to make roast duck:

Preheat oven to 375°. Wash duck in cold water. Drain well and pat dry. Sprinkle each cavity with salt and pepper. Stuff each with 1 clove of garlic, 1 teaspoon parsley, 1 teaspoon chopped celery, 1 tablespoon chopped apples and 1 slice lemon. Arrange ducks in roasting pan. Place 3 slices bacon over each breast. Add wine, chicken bouillon and onions. Roast 2 hours, basting frequently. Remove from pan and place in heated serving dish. Strain pan juices. Add jelly to juices. Heat. Serve with duck.
