Roast duck



  • water - 2 c
  • nutmeg - 1/2 Tbsp
  • dry mustard - 1 Tbsp
  • paprika - 1 item
  • Worcestershire sauce - 1 Tbsp
  • chili sauce - 1 c
  • salt and pepper - 1 item
  • large onion, chopped - 1 item
  • celery, chopped - 1 c
  • or 2 cloves garlic, chopped - 1 item
  • ducks, cut in half - 2 item
  • juice from 1 small lemon

How to make roast duck:

Rub ducks with garlic, salt and pepper. Place breast side down in roaster. Combine other ingredients except paprika; pour over ducks. Bake at 325° for 3 hours. When ducks are tender, turn breast side up and sprinkle with paprika. Bake until golden brown. Can be served with gravy. Add small amount of flour to drippings and cook until thickened, gradually add water to your desire. Makes 4 servings.
