Rice pudding

Rice pudding



  • sugar - 1 c
  • vanilla extract - 6 Tbsp
  • stick margarine - 1 item
  • raisins optional - 1 item
  • half and half or cream - 2 qt
  • white rice - 4 c

How to make rice pudding:

Boil 4 cups rice in 1 gallon of water, until rice is semi-soft (want it to be a little hard). Drain water, cut up stick of margarine and stir into rice along with 1 cup of sugar. Set aside. Heat half and half on top of stove. Do not boil. Let it come to a boil, then add to rice mixture along with 6 tablespoons of vanilla extract. Stir entire mixture. Put into preheated oven at 375° for 45 minutes. After 45 minutes, stir entire mixture and add 2 more tablespoons vanilla and raisins, if you want to. Cook at 350° for 30 more minutes or until mixture sets.
