Ingredients/Components
- nutmeg - 1/4 tsp
- raisins - 1/2 c
- honey - 3 tsp
- skim milk - 1 c
- chopped apples - 1 c
- cooked rice - 2 c
- apple juice - 1 c
- cinnamon stick - 1 item
- regular or low-fat margarine - 2 tsp
How to make rice pudding:
Combine the milk, apple juice, honey, margarine, cinnamon and nutmeg in a saucepan. Heat just to boiling. Add rice, apples and raisins. Heat just to a simmer. Remove the cinnamon.Coat a 1 1/2-quart casserole dish with nonstick spray. Pour in pudding mixture. Bake at 350° until top is lightly browned, approximately 25 to 30 minutes. Serve warm. Yields 4 servings.
