Ingredients/Components

  • green onions with tops, chopped - 3 item
  • 5 ml salt - 1 tsp
  • 30 ml butter - 2 Tbsp
  • or 298 g can cream of chicken soup - 1 1/2
  • 360 ml water
  • 240 ml brown rice - 1 c
  • 120 ml chopped celery - 1/2 c
  • or 298 g can cream of mushroom soup - 1 1/2
  • or 128 g each shrimp - 2 cans
  • or 454 g can bean sprouts - 1 oz
  • 240 ml bread crumbs - 1 c
  • 120 ml chopped pecans - 1/2 c

How to make rice casserole:

Place water, rice and salt in saucepan; cook for 20 to 30 minutes or until rice is tender. In small skillet, saute celery and onions in butter.

Place rice on bottom of greased 3-quart (2835-ml) casserole. Spoon the sauteed vegetables over rice. Pour soup, shrimp and bean sprouts over vegetables. Sprinkle bread crumbs on top and garnish with chopped nuts. Bake at 350° (177°C) about 30 minutes or until bubbly. Yields 8 to 10 servings.
