Rhubarb upside-down cake



Ingredients/Components
- sugar - 3/4 c
- cinnamon - 1/2 tsp
- vanilla - 1/2 tsp
- salt - 1/4 tsp
- flour - 2 Tbsp
- baking powder - 2 tsp
- egg - 1 item
- margarine - 1/4 c
- strawberry jello - 2 Tbsp
- finely cut rhubarb - 4 c
- In a warm skillet, combine the rhubarb, sugar, flour, cinnamon, jello and margarine
- milk or slightly more - 2/3 c
How to make rhubarb upside-down cake:
Preheat oven to 350°. In a warm skillet, combine the rhubarb, sugar, flour, cinnamon, jello and margarine. Stir until melted, then set aside to cool.Batter (Or Topping):1 1/2 c. flour1/4 c. sugar2 tsp. baking powder1/4 tsp. salt1/4 c. margarine2/3 c. milk or slightly more1 egg1/2 tsp. vanilla Combine all ingredients. Transfer rhubarb mixture to sprayed 9 x 9 x 2-inch or deep round pan. Beat topping ingredients together and spread over rhubarb. Bake 35 minutes or until done when tested with a toothpick.
