Rhubarb pudding cake
Ingredients/Components
- sugar
- milk - 1/2 c
- salt - 1/2 tsp
- flour - 3/4 c
- cornstarch
- baking powder - 1 tsp
- boiling water - 1/2 c
- stick butter or oleo - 1/2 item
- sliced rhubarb - 2 c
- bran flakes - 1/2 c
How to make rhubarb pudding cake:
Slice rhubarb into 1-inch lengths. Arrange in a greased 8-inch square pan. Cream the shortening and 3/4 cup of sugar. Blend in bran flakes. Sift flour with baking powder and salt; add alternately with milk to shortening and sugar mixture. Spread batter over rhubarb.Blend remaining 3/4 cup of sugar and cornstarch; sprinkle over batter. Pour boiling water over cake. Bake at 375° for 50 minutes, or until browned.
This is a moist cake with rhubarb pudding base. Makes 8 servings.
