  • sugar
  • milk - 1/2 c
  • salt - 1/2 tsp
  • flour - 3/4 c
  • cornstarch
  • baking powder - 1 tsp
  • boiling water - 1/2 c
  • stick butter or oleo - 1/2 item
  • sliced rhubarb - 2 c
  • bran flakes - 1/2 c

How to make rhubarb pudding cake:

Slice rhubarb into 1-inch lengths. Arrange in a greased 8-inch square pan. Cream the shortening and 3/4 cup of sugar. Blend in bran flakes. Sift flour with baking powder and salt; add alternately with milk to shortening and sugar mixture. Spread batter over rhubarb.

Blend remaining 3/4 cup of sugar and cornstarch; sprinkle over batter. Pour boiling water over cake. Bake at 375° for 50 minutes, or until browned.

This is a moist cake with rhubarb pudding base. Makes 8 servings.
