Rhubarb muffins
Ingredients/Components
- sugar - 1/3 c
- cinnamon - 1 tsp
- vanilla - 2 tsp
- salt - 1/2 tsp
- flour
- butter
- soda - 1 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- egg - 1 item
- firmly packed brown sugar
- nuts - 1/2 c
- salad oil - 1/2 c
- rhubarb
How to make rhubarb muffins:
Topping:1 Tbsp. butter1/3 c. sugar1 tsp. cinnamon Combine first 5 ingredients; beat slightly to mix well. Then add the combined dry ingredients, stirring only until well mixed. Stir in nuts and rhubarb. Fill muffin tins.Sprinkle mixed topping on muffins before baking. Bake at 400° for 15 to 18 minutes. Makes 18 large muffins or 24 small.
