Rhubarb muffins
Ingredients/Components
- cinnamon - 1 tsp
- vanilla - 2 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour
- brown sugar
- soda - 1 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- melted butter - 1 tsp
- egg - 1 item
- Crisco - 1/2 c
- diced rhubarb
- Stir this into rhubarb until blended
How to make rhubarb muffins:
Combine first 5 ingredients, then stir in rhubarb and nuts, then combine last 4 ingredients. Stir this into rhubarb until blended. Spoon into muffin cups, 2/3 full.Topping:1/3 c. sugar1 tsp. cinnamon1 tsp. melted butter Spread over muffins. Bake at 375° for 20 to 25 minutes.Recipe categories: Breads, Quick breads, Muffins.
