Rhubarb muffins
Ingredients/Components
- cinnamon - 1 tsp
- vanilla - 2 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour
- brown sugar
- oil - 1/2 c
- soda - 1 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- egg - 1 item
- white sugar - 1/2 c
- diced rhubarb
- Stir in rhubarb, nuts and vanilla
How to make rhubarb muffins:
Mix brown sugar, oil, egg, vanilla and buttermilk in large bowl. Stir in rhubarb, nuts and vanilla. In another bowl combine flour, soda, baking powder and salt, then add to rhubarb mixture. Spoon batter into muffin pan.Topping:1 tsp. melted butter1 tsp. cinnamon1/2 c. white sugar Combine and spoon over top of muffins, pressing it down. Bake at 375° for 20 to 25 minutes.
