Rhubarb muffins
Ingredients/Components
- sugar - 1/3 c
- vanilla - 2 tsp
- packed brown sugar
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour
- buttermilk - 1 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- vegetable oil - 1/2 c
- egg - 1 item
- butter or margarine, softened - 1 Tbsp
- ground cinnamon
- diced fresh rhubarb
How to make rhubarb muffins:
Topping:1 tsp. ground cinnamon1 Tbsp. butter or margarine, softened1/3 c. sugar In a bowl, combine first five ingredients. Mix well. Stir in flour, salt, rhubarb, baking soda, baking powder and nuts. Pour into greased or paper-lined muffin cups.Mix topping ingredients. Sprinkle over muffins and press lightly into batter. Bake at 375° for 15 to 18 minutes. Yield: 15 muffins.
