Ingredients/Components

  • sugar - 1/3 c
  • vanilla - 2 tsp
  • packed brown sugar
  • salt - 1/2 tsp
  • chopped nuts - 1/2 c
  • flour
  • buttermilk - 1 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • vegetable oil - 1/2 c
  • egg - 1 item
  • butter or margarine, softened - 1 Tbsp
  • ground cinnamon
  • diced fresh rhubarb

How to make rhubarb muffins:

Topping:1 tsp. ground cinnamon1 Tbsp. butter or margarine, softened1/3 c. sugar In a bowl, combine first five ingredients. Mix well. Stir in flour, salt, rhubarb, baking soda, baking powder and nuts. Pour into greased or paper-lined muffin cups.

Mix topping ingredients. Sprinkle over muffins and press lightly into batter. Bake at 375° for 15 to 18 minutes. Yield: 15 muffins.
