Rhubarb custard bars
Ingredients/Components
- sugar - 1/4 C
- flour - 2 C
- eggs, beaten - 3 item
- whipping cream - 1 C
- cream cheese, softened
- cold butter - 1 C
- chopped rhubarb - 5 C
- vanill - 1/2 tsp
- whipped cream, whipped - 1 C
How to make rhubarb custard bars:
Filling:2 C. sugar7 Tbsp. flour1 C. whipping cream3 eggs, beaten5 C. chopped rhubarb Topping:6 oz. cream cheese, softened1/2 C. sugar1/2 tsp. vanill1 C. whipped cream, whipped In a bowl combine the flour and 1/4 C. sugar; cut in butter until the mixture resembles coarse crumbs. Press into a greased 9 x 13-inch pan.Bake at 350 degrees for 10 minutes.
FILLING: Combine 2 C. sugar and flour in a bowl. Whisk in cream and eggs. Stir in the rhubarb. Pour over crust.
Bake for 40 - 45 minutes. Cool.
TOPPING: Beat cream cheese, sugar and vanilla until smooth; fold in whipped cream. Spread over top. Cover and chill.
Cut into bars. Store in refrigerator.
