Rhubarb custard bars



  • sugar - 4 Tbsp
  • vanilla - 1/2 tsp
  • pkg
  • salt - 1/4 tsp
  • flour - 2 c
  • cream - 1 c
  • whipping cream, whipped - 2 c
  • butter room temperature - 1 c
  • finely cut rhubarb - 5 c
  • egg yolks or 3 eggs - 6 item

How to make rhubarb custard bars:

Topping:1 (4 oz.) pkg. cream cheese1/2 c. sugar1/2 tsp. vanilla2 c. whipping cream, whipped Mix first 3 ingredients until crumbly. Pat into ungreased pan. Bake 10 minutes. As crust bakes, beat the egg yolks or eggs, adding sugar, flour, salt and cream until well blended. Mix in the rhubarb. Pour mixture over crust and bake for 50 minutes or until custard is well set. Remove from oven and cool.

For topping, blend cream cheese, sugar and vanilla. Fold in whipped cream and spread over the cooled rhubarb. Chill and serve.
