Rhubarb custard bars
Ingredients/Components
- sugar - 1/4 c
- vanilla - 1/2 tsp
- flour - 2 c
- eggs, beaten - 3 item
- whipping cream - 1 c
- cream, whipped - 1 c
- cold butter or margarine - 1 c
- Cut in butter
- finely chopped rhubarb - 5 c
- Whisk in cream and eggs
How to make rhubarb custard bars:
Combine flour and sugar. Cut in butter. Press into greased 9 x 13 pan. Bake at 350° for 10 minutes.Filling:2 c. sugar7 Tbsp. flour1 c. whipping cream3 eggs, beaten5 c. finely chopped rhubarb Combine sugar and flour. Whisk in cream and eggs. Stir in rhubarb. Pour over crust. Bake at 350° for 40 to 45 minutes, until crust is set. Cool.Topping:8 oz. cream cheese1/2 c. sugar1 c. cream, whipped1/2 tsp. vanilla Beat cream cheese, sugar and vanilla until smooth. Fold in whipped cream. Spread over top of rhubarb, cover, chill.
