Rhubarb crunch
Ingredients/Components
- sugar
- cinnamon - 3/4 tsp
- vanilla - 1 tsp
- flour - 1 c
- brown sugar - 1 c
- cornstarch - 3 Tbsp
- water
- butter or margarine, melted - 1/2 c
- oatmeal - 3/4 c
- rhubarb, diced - 6 c
How to make rhubarb crunch:
Combine the flour and oatmeal in a mixing bowl. Stir in butter, brown sugar and cinnamon until crumbly. Put 3/4 of the crumbs in a 13 x 9-inch dish and pack down to make crust. Add the raw rhubarb over the crust.In a saucepan, cook sugar, cornstarch and water together, boiling until thick. Add vanilla to thickening and pour over rhubarb. Sprinkle remainder of crumb mixture on top. Bake at 350° for 1 hour.
You can use apples instead of rhubarb.
