Ingredients/Components

  • sugar
  • cinnamon - 3/4 tsp
  • vanilla - 1 tsp
  • flour - 1 c
  • brown sugar - 1 c
  • cornstarch - 3 Tbsp
  • water
  • butter or margarine, melted - 1/2 c
  • oatmeal - 3/4 c
  • rhubarb, diced - 6 c

How to make rhubarb crunch:

Combine the flour and oatmeal in a mixing bowl. Stir in butter, brown sugar and cinnamon until crumbly. Put 3/4 of the crumbs in a 13 x 9-inch dish and pack down to make crust. Add the raw rhubarb over the crust.

In a saucepan, cook sugar, cornstarch and water together, boiling until thick. Add vanilla to thickening and pour over rhubarb. Sprinkle remainder of crumb mixture on top. Bake at 350° for 1 hour.

You can use apples instead of rhubarb.
