Ingredients/Components

  • sugar - 1 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • cornstarch - 2 Tbsp
  • water - 1 c
  • melted butter - 1/2 c
  • sifted flour - 1 c
  • brown sugar, firmly packed - 1 c
  • diced rhubarb
  • uncooked rolled oats - 3/4 c

How to make rhubarb crunch:

Fruit Mixture:4 c. diced rhubarb2 Tbsp. cornstarch1 tsp. vanilla1 c. sugar1 c. water Crumb Topping: Mix together crumb topping ingredients until crumbly. Press half of crumbs in greased 9-inch layer pan. Cover with rhubarb

Fruit Mixture: In small saucepan combine sugar, cornstarch, water and vanilla. Cook, stirring, until thick and clear. Pour over rhubarb in pan with crumbs. Top with remaining crumbs. Bake at 350° for 1 hour. Cut in squares. Makes 8 servings.
