  • sugar - 1 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • flour - 1 c
  • brown sugar - 1 c
  • butter - 1/2 c
  • cornstarch - 2 Tbsp
  • water - 1 c
  • rolled oats - 3/4 c
  • rhubarb, cut in 1-inch pieces

How to make rhubarb crumble:

Fruit Mixture:4 c. rhubarb, cut in 1-inch pieces1 c. water1 c. sugar1 tsp. vanilla2 Tbsp. cornstarch Mix together crumb topping. Press half of the crumb mixture into a 9-inch pan. Cover with rhubarb.

Mix the cornstarch, water, sugar and vanilla in a saucepan over medium heat, stirring until thick and clear. Pour over rhubarb. Top with remaining crumb mixture. Bake at 350° for 1 hour. Cut into squares and serve.
