Ingredients/Components

  • melted margarine - 2 3
  • boiling water - 1 c
  • diced rhubarb - 4 c
  • sugar or equivalent in honey - 1 c
  • strawberry Jell-O 3 Tbsp - 1/2 pkg
  • Jiffy cake mix white - 1 pkg

How to make rhubarb crumble:

Spread diced rhubarb evenly in bottom of a 7 x 11-inch pan. Sprinkle 1 cup of sugar and Jell-O powder over the top, then the Jiffy cake mix. Pour the hot water over the contents and drizzle the margarine. Bake for 1 hour in 350° oven. May be served with whipped cream or ice cream.

Note: This is a favorite dessert in Alaska because it grows so fast and is abundant everywhere.
