Rhubarb coffee cake
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- vanilla - 1 tsp
- flour
- brown sugar
- nutmeg - 1/2 tsp
- soda - 1 tsp
- egg - 1 item
- softened butter - 2 Tbsp
- grated orange rind - 1 item
- sour milk - 1 c
- liquid shortening - 2/3 c
- or 2 1/2 c - 2 c
- dried currants optional - 1/4 c
How to make rhubarb coffee cake:
Second Mixture:1 c. sugar1/2 tsp. nutmeg1 tsp. cinnamon2 Tbsp. softened butter Cream first 4 ingredients. Add alternately milk/vanilla mix and flour/soda mix. Combine. Fold in rhubarb and currants. Pour into 10 x 14-inch oiled and floured pan. Top with second mixture that has been worked together. Bake at 350° for 45 to 50 minutes.
