Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • chopped pecans - 1/2 c
  • salt - 1/2 tsp
  • flour - 2 c
  • butter - 1/2 c
  • soda - 1 tsp
  • buttermilk - 1 c
  • egg - 1 item
  • Add egg and beat well
  • rhubarb, finely cut - 2 c

How to make rhubarb coffee cake:

Cream sugar and butter. Add egg and beat well. To creamed butter, sugar and egg, add alternately buttermilk with mixture of flour, salt and soda. Mix well. Add rhubarb and vanilla. Pour into greased 9 x 13-inch pan and add Topping.Topping:1 c. sugar1 tsp. cinnamon1/2 c. chopped pecans Add to top and bake at 350° for 45 minutes to 1 hour.
