Rhubarb cobbler



  • sugar - 1 item
  • milk - 1/2 c
  • salt - 1/4 tsp
  • flour - 1 c
  • butter - 1/4 c
  • baking powder - 2 tsp
  • diced rhubarb - 3 c
  • fruit juice - 1 c

How to make rhubarb cobbler:

Cream the butter and 1/2 cup of sugar until light and fluffy. Stir flour, baking powder and salt together; stir into butter mixture alternately with milk. Beat until smooth. Pour into loaf pan. Spoon rhubarb over batter. Sprinkle 3/4 cup of sugar over rhubarb. Pour fruit juice over top. Bake at 375° for 45 to 50 minutes. Serve warm with cream, whipped cream or ice cream, if desired. Yields 6 servings.
