Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla - 1 tsp
- milk - 1/4 c
- flour - 2 c
- brown sugar - 2/3 c
- coconut - 1 c
- soda - 1 tsp
- vegetable oil - 1/2 c
- egg - 1 item
- nuts - 1 c
- sour milk - 1 c
- rhubarb, cut fine
- Combine rhubarb with 1/2 cup sugar and set aside
How to make rhubarb cake:
This cake keeps well and is very moist.Combine rhubarb with 1/2 cup sugar and set aside. Mix flour, sugar, oil, egg, sour milk, soda, cinnamon and vanilla. Add rhubarb and sugar mixture. Stir until well blended. Pour into greased and floured 9 x 12-inch pan. Bake at 350° for 1 hour or until done.Topping:6 Tbsp. oleo or butter1 c. coconut2/3 c. brown sugar1/4 c. milk1 c. nuts Combine ingredients and cook 3 minutes. Pour over topping of cake while still warm.
