Ingredients/Components

  • vanilla - 1 tsp
  • granulated sugar - 1 item
  • packed brown sugar
  • salt - 1 tsp
  • flour - 2 Tbsp
  • buttermilk - 1 c
  • baking soda - 1 tsp
  • egg - 1 item
  • all-purpose flour
  • cooking oil - 1/2 c
  • frozen or regular rhubarb, finely chopped - 1 c
  • Topping: butter or margarine

How to make rhubarb bread:

Topping: butter or margarine granulated sugar In large mixing bowl, stir together the flour, brown sugar, baking soda and salt. In another bowl combine egg, buttermilk, oil and vanilla. Stir into dry ingredients; mix well. Toss rhubarb with flour, fold rhubarb into batter. Pour into prepared pans (greased pans). Dot each loaf with 2 or 3 teaspoons of butter and sprinkle with 2 or 3 teaspoons granulated sugar. Bake at 350° about 45 to 50 minutes or until toothpick comes out clean. Cool in pans. Makes 2 loaves.
