Ingredients/Components
- vanilla - 1 tsp
- salt - 1 tsp
- chopped nuts - 1/2 c
- oil - 2/3 c
- buttermilk - 1 c
- baking soda - 1 tsp
- egg - 1 item
- all-purpose flour
- firmly packed brown sugar
- grated orange peel
- butter room temperature - 1 Tbsp
- chopped, uncooked fresh rhubarb
- Grease and flour two 9 x 5-inch loaf pans
How to make rhubarb bread:
Preheat oven to 350°. Grease and flour two 9 x 5-inch loaf pans. Combine brown sugar and oil in a large bowl and beat well. Mix buttermilk, egg, vanilla, baking soda and salt in a small bowl. Add to brown sugar mixture. Blend thoroughly. Gently fold in flour, rhubarb and nuts. Divide batter evenly between prepared loaf pans.Topping:1/2 c. sugar1 1/2 Tbsp. grated orange peel1 Tbsp. butter (room temperature) Mix with fork and sprinkle on top. Bake about 1 hour.
