  • cream cheese - 3 oz
  • pkg - 1 oz
  • salt - 1/2 tsp
  • cold water - 2 3
  • shortening
  • all-purpose flour - 1 c
  • caraway seed - 1 tsp
  • shredded Swiss cheese - 1 c
  • sauerkraut, drained - 1/2 c
  • Thousand Island dressing - 1/4 c

How to make reuben roll-ups:

Cream Cheese Pastry:1/4 c. shortening3 oz. cream cheese1 c. all-purpose flour1 tsp. caraway seed1/2 tsp. salt2 to 3 Tbsp. cold water To make pastry: Cut shortening and cheese into flour, caraway seed and salt thoroughly. Sprinkle in 1 tablespoon water at a time, mixing with fork until flour is moistened. Divide dough in half. Roll each into a rectangle, 11 x 9-inch, on lightly floured cloth covered board. Spread each rectangle with 2 tablespoons dressing.

Mix corned beef, cheese and sauerkraut together. Top each rectangle with half of the corned beef mixture. Fold in ends. Roll up, beginning at 11-inch side. Pinch edges to seal; place on ungreased cookie sheet. Bake at 450° until golden brown, 15 to 20 minutes. Cut into sandwich serving size.
