Reuben croquettes
Ingredients/Components
- eggs - 2 item
- milk - 1/3 c
- salt - 1/2 tsp
- water
- oil - 1 2
- egg - 1 item
- oleo - 1/2 Tbsp
- lemon juice - 4 tsp
- pepper - 1/4 tsp
- chopped onion - 1/4 c
- mustard - 1/4 c
- dried bread crumbs
- rice, cooked - 1/2 c
- shredded Swiss cheese - 1 c
- can corned beef - 1 item
- can kraut - 1 item
- Drain kraut as well as possible
How to make reuben croquettes:
Cook rice with 1 1/3 cups of water, 1/2 teaspoon of salt and oleo. Drain kraut as well as possible. Chop kraut and corned beef very fine. Add onion, 2 eggs, rice, cheese, 1 teaspoon of salt and pepper. Mix well. Shape into 18 balls. Combine 1 egg and 2 teaspoons of water; beat slightly. Roll each ball in egg wash and roll in crumbs again. Cook in hot, shallow oil for 5 to 7 minutes.
