  • sugar - 1/3 c
  • salt
  • flour - 4 c
  • egg, slightly beaten - 1 item
  • melted butter - 1 item
  • shortening - 1/3 c
  • warm water - 1 c
  • cake yeast - 1 item
  • lukewarm water - 1/2 c

How to make refrigerator rolls:

Dissolve yeast in 1/2 cup water; add sugar and 1 cup flour. Set aside for about 10 minutes to form a sponge. Melt shortening in 1 cup warm water; add egg and stir into sponge. Beat in salt sifted with 3 cups flour or enough to make a rather stiff dough. Knead until the dough feels elastic and transfer to a large greased bowl. Cover and let stand until double in bulk.

Punch down well and brush with melted butter. Place in the refrigerator overnight. To shape, roll small bits, about the size of marbles and drop three of each into each compartment of a well-greased muffin pan. Let rise and bake in a very hot oven, 425°, 15 to 20 minutes or until brown on top.
