Ingredients/Components

  • sugar - 3/4 c
  • salt
  • eggs, beaten - 2 item
  • boiling water - 1 c
  • shortening - 1 c
  • unsifted flour
  • dry yeast - 2 pkg
  • lukewarm water - 1 c

How to make refrigerator rolls:

Pour boiling water over shortening, sugar and salt in small mixing bowl. Stir until shortening and sugar are dissolved. Cool. Add beaten eggs. Meanwhile, in large bowl, let yeast stand in lukewarm water for 5 minutes, then stir and pour first mixture into large bowl. Add 4 cups flour. Beat well with electric mixer, then add 2 1/2 cups flour and mix by hand. Cover and place in refrigerator at least 4 hours. Dough will rise slightly and will keep a week to 10 days, to be used as needed.

About 3 hours before baking time, make rolls in desired shapes, using enough flour to make them easy to handle. Place on greased pans, let rise at room temperature (about 2 1/2 hours). Bake at 425° for 12 to 15 minutes. Makes delicious cinnamon rolls.
