  • sugar - 2/3 c
  • pkg - 3 oz
  • boiling water - 1 c
  • graham crackers - 1 item
  • can Carnation or Pet evaporated milk - 1 item

How to make refrigerator cheese cake:

Dissolve lemon Jello in boiling water, then set aside. Be sure it is completely cooled at room temperature, but not jelled.

Cream together in large mixer bowl, cream cheese and sugar, making sure cream cheese is soft for easier creaming. Then add cooled Jello and mix well.

Whip evaporated milk until it fills smaller mixer bowl. Beat until thick; milk must be completely chilled, possibly overnight. Then add whipped milk to cheese, sugar and Jello mixture. Beat all ingredients until they fill a large mixer bowl, completely full. Pour mixture over graham cracker squares in a pan 13 x 19 x 2-inches. Then sprinkle remaining crackers (made into crumbs with rolling pin) over top of mixture. Put immediately into refrigerator and chill thoroughly until completely firm; 3 - 4 hours at least, better yet, overnight. Need only one package of graham crackers out of a one pound box (usually three packages to a box).

Invite over guest speaker from church. Serve with lasagna, tossed salad, and Italian bread. If Wayne Wager is the guest speaker, make two!
